The meat is kneaded, stuffed, and undergoes a natural maturation-drying process for several months, after which it offers an intense flavor and aroma. When cut, it shows a fine mince and bright red coloration with varying intensities, typical of fat infiltration in the muscles of pigs fed 100% naturally.
