JOSELITO is the proprietor of its own herd of Iberian pigs. The
exceptional qualities of this race, together with the care put into
the growing of the animals, allow maintaining the quality of all their
products in a reliable and permanent form. Joselito pig has a great
power of adaptation and presents a slow growth, distinctive of a
raising in absolute freedom in its natural habitat, the dehesa, which determines four of its more distinctive aspects:
- It does constant exercise while looking for food and water.

It's age, when leaving the dehesas, is up to approximately 2 years.
- It has a prominent weight when finishing the montanera (final stageof life) of 170-190kg.

Great capacity to infiltrate fat within their muscles.
These factors define a great variety of sensorial characteristics:

The
greater age of the pig and the greater muscular firmness makes thetexture of the pork more consistent.

The enduring and constant
exercise increases the quality of the meat, as it increases the
oxidative capacity of the muscle, which in turn confers an intense and red colour to it.

The increase in weight in animals of adult ages
derives almost exclusively in a greater amount of fat infiltrated in the muscular tissue.
